The Potato Base

The star of this dish is, of course, the humble potato. Russet Potatoes are the go-to choice for this recipe, because of their starchy texture that crisps up perfectly. While Russet Potatoes work best because of their starchy texture, we can use other varieties like Yukon Gold or Red Potatoes for a different flavor and texture.

The Cajun Spice Mix

The heart and soul of Cajun-Spiced Crispy Potatoes lie in the spice mix. A blend of paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, and a pinch of salt creates the perfect balance of heat and flavor. Adjust the spice level to your liking, but remember, Cajun cuisine is all about that fiery kick.

Today I’m sharing a Restaurant-Style Cajun Potato Recipe which can be effortlessly recreated at home, delivering a taste reminiscent of the flavors we savor at Barbeque Nation. Let’s dive into the recipe.

INGREDIENTS: (For Cajun Potato Recipe)

5 Baby Potatoes1 tsp Paprika (Red
Chilli Powder)
½ cup Mayonnaise
Oil for frying½ tsp Cayenne PepperTomato Ketchup

Corn Flour for
Slurry
½ tsp Garlic Powder1-2 tsp Milk
½ tsp Onion Powder
½ tsp Dried Thyme
½ Dried Oregano
Salt to Taste
½ tsp Black Pepper
Powder

INSTRUCTIONS: (For Cajun Potato Recipe)

1. For Preparing Potatoes:

  1. Wash and scrub the potatoes thoroughly.
  2. Cook the potatoes, leaving the skin on. The skin adds crispness to the potato.
  3. Use any of the methods for cooking. The first method is; to pressure cook the potatoes until tender. The second method is, to microwave the potatoes for 5 minutes or until 90% tender. The third method is; to boil the potatoes for 10 to 15 minutes in a stovetop pot.
  4. Don’t overcook the potatoes, or else they will turn mushy. Mushy potatoes will not become crisp after frying.
  5. Once the potatoes reach the desired tenderness, drain all the water and let the potatoes cool down.
  6. After it cools, press or smash each baby potato either with the back of a heavy spoon or with your hands till the skin just splits.
  7. Make a cornflour slurry and coat the potatoes with it.
  8. In a pan, heat some oil and shallow fry all the potatoes till they turn golden and crispy.

2. For Cajun Spice Mix:

  1. Either use store-bought Cajun Spice Mix or prepare it at home. (This is readily available in the market.)
  2. To prepare it at home, mix all the spices (paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper) in the quantities mentioned in the ingredients table. Adjust the quantities to suit your palate.
  3. Mix well to create a Cajun spice blend.

3. For Cajun Dip or Dressing:

  1. In a small bowl, combine the cajun spice mix and mayonnaise. Add 1 tsp ketchup also. But adding ketchup is completely optional. I don’t prefer using this.
  2. Add 1-2 tsp of Milk if the dip or dressing is too thick. Adjust the consistency to your preference.

4. For the final Cajun Potato:

  1. Place all the fried potatoes on a serving plate.
  2. Pour the dressing over it.
  3. Sprinkle some chopped onions and coriander for garnishing, and serve.

Any kind of potato can be used for this recipe. I prefer using baby potatoes because of their adequate size.
