Crispy Arbi Fries Recipe.

Arbi Fries are a delicious snack prepared from Colocasia Roots, also known as Taro or Arbi, which are thinly sliced and deep fried to a golden crispiness. Originating from various culinary traditions across the globe, Arbi Fries have gained popularity due to their crunchy texture and ability to absorb different flavors.

Crispy Arbi Fries are an innovative take on traditional Potato Fries or other Fries, offering a flavorful twist to the beloved snack. Made from Colocasia Roots, these fries provide a delightful alternative for those seeking new taste experiences.

INGREDIENTS: (For Crispy Arbi Fries)

For BoilingFor Coating or Seasoning
1 Kg Arbi (Taro Root)4 tsp Besan (Chickpea Flour)
Water 2 tsp Lemon Juice
1 tsp SaltSalt To Taste
2 tsp Turmeric Powder1 tsp Red Chilli Powder
1 tsp Turmeric Powder
1 tsp Dry Mango Powder
(Amchur)
1 tsp Cumin Seeds
1 tsp Ajwain (Carom Seeds)
½ tsp Ginger Paste
½ tsp Black Salt
½ tsp Black Pepper Powder
3-4 tsp Water
Oil for deep frying
Chaat Masala (Any Brand’s)

INSTRUCTIONS:

  1. Begin by peeling the Arbi (Taro Roots). Discard its ends.
  2. Cut these Arbi (Taro Roots) into thin, uniform slices.
  3. Place all slices in a colander and wash them thoroughly under running water to remove any dirt or debris.
  4. In a pot, boil 2 glasses of Water for 5 to 7 minutes. There should be a rolling boil in water.
  5. Once there is a rolling boil in Water, place the washed Arbi Slices in boiling water along with Salt and Turmeric powder. (Add Arbi to the boiled water only).
  6. Cook it for about 10 to 12 minutes or until they are tender but not mushy. You can pressure cook it until 1 whistle instead of cooking in a pot.
  7. Use a fork to check if they are cooked properly.
  8. Take a colander and drain the boiling water after boiling is done. Let the boiled Arbi Slices sit in the colander and cool down at room temperature.
  1. In a bowl, prepare a mixture to coat the boiled Arbi (Taro Roots). To prepare this mixture, add Besan (Chickpea Flour), Lemon Juice, Salt, Red Chilli Powder, Turmeric Powder, Dry Mango Powder, Cumin Seeds, Ajwain, Ginger Paste, Black Salt, Black Pepper Powder in a bowl.
  2. Adjust the seasoning according to your taste preferences.
  3. Take the sliced Arbi and coat all pieces evenly with the prepared coating mixture.
  4. Ensure the slices are coated thoroughly. Toss to coat evenly.
  5. Add water for perfect coating consistency.
  6. Let it rest for 10 minutes.
  1. Heat Oil in a wok (Kadhai) or deep frying pan over medium heat.
  2. Once Oil is hot, carefully place the coated Arbi slices into hot oil, ensuring they are not overcrowded in the wok. Fry all slices in small batches.
  3. Flip them occasionally, and deep fry over medium heat until they turn golden brown and crispy.
  4. Remove the fried Arbi Slices using a slotted spoon and place them on an absorbent paper to drain excess oil.
  5. Once all the Arbi Slices are fried, transfer them on a serving plate.
  6. Sprinkle some Chaat Masala and squeeze half a Lemon.
  7. Garnish with fresh Coriander Leaves and serve.
  8. Enjoy the Crispy Arbi Fries hot with your favorite Dipping Sauce or Chutney.

  • To achieve the perfect crunch, ensure the Oil is adequately hot before frying the Arbi Slices.
  • Additionally, pat dry the slices to remove the excess moisture for crispier results.
  • Avoid overcrowding the frying pan or wok for even cooking.
  • An alternative for deep frying is you can make these fries in an Air Fryer.
