Today I’m covering the recipe of “Gobhi 65” (Cauliflower 65).
INGREDIENTS:
For Marination | For Frying | For Tempering |
---|---|---|
Cauliflower Florets | Oil (for deep frying) | 2 tsp Oil |
½ cup Yogurt | Marinated Cauliflower Florets | 1 tsp Mustard seeds (small size) |
1 tsp Ginger Garlic Paste | 1 inch Ginger (chopped) | |
1 tsp Curry Leaves (chopped) | 2-3 Garlic Cloves (chopped) | |
1 tsp Black Pepper Powder | 2 Green Chillies (slit) | |
Salt To Taste | 1 sprig Curry Leaves | |
2 tsp Degi Red Chilli Powder (For Color) | Salt To Taste | |
2 tsp Corn Starch | ½ Degi Red Chilli Powder | |
2-3 tsp Rice Flour | ¼ Black Pepper Powder | |
2 tsp Refined Flour | Fried Gobhi (Cauliflower) | |
Little Water |
METHOD:
- Take 1 small Gobhi (Cauliflower) and cut it into small florets.
- Marinade Gobhi Florets in a mixture of Yoghurt, Ginger Garlic Paste, Black Pepper Powder, Salt, Degi Red Chilli Powder, Corn Starch, Rice Flour, Refined Flour and a little bit of water. Quantities are mentioned above. This is basic 65 Marination.
- Keep the marinated Gobhi aside for further use.
- Deep fry the marinated Gobhi in hot oil until crispy. Transfer the fried Gobhi to a plate.
- For Tempering, Heat oil in a wok.
- Add Mustard Seeds to it and let it splutter.
- Now add Ginger, Garlic, Green Chillies. Saute it for 30 seconds.
- Then add Curry Leaves and Salt, Red Chilli Powder and Black Pepper Powder to it. We can use ketchup too but classically this is a dry tossed recipe, not consisting of ketchup.
- Quickly toss the fried Gobhi (Cauliflower) in this tempering and garnish with coriander at the end.
