Instead of boiling these Sweet Potatoes, I cooked them on a covered griddle (tawa) to trap the heat and create a tandoori or smoky effect. The covered griddle process imparts a smoky flavor and charred appearance, reminiscent of traditional tandoor-cooked dishes. Cooking the Sweet Potatoes with this technique takes the dish to a whole new level. This technique enhances the overall sensory experience, making each bite a flavorful journey.

Before we dive into the recipe, let’s take a moment to appreciate the health benefits of Sweet Potatoes. These root vegetables are not only delicious but also packed with essential vitamins, minerals, and fiber.

240 Grams Sweet Potato
2 tsp Olive Oil
1 tsp Red Chilli Powder or Flakes
½ tsp Black Salt
½ tsp Black Pepper Powder
Salt to Taste
½ tsp Chaat Masala
Olive Oil (for grilling)
Coriander Leaves
  1. Wash the Sweet Potatoes thoroughly. Allow them to dry.
  2. For cooking Sweet Potatoes, heat a tawa (griddle) on low heat and carefully place the Sweet Potatoes on it.
  3. Cover the griddle with a lid properly to trap the heat and create a smoky or tandoori effect. This step allows the Sweet Potatoes to cook in their juices, absorbing the smoky flavors.
  4. Cook the Sweet Potatoes until they are tender and have a smoky, charred exterior.
  5. Turn the Sweet Potatoes occasionally for even cooking. Cooking process on tawa typically requires approximately 25 minutes.
  6. Once cooked, turn off the heat and allow the Sweet Potatoes to sit uncovered on the tawa for 10 minutes.
  7. After 10 minutes, uncover them and let them cool slightly before peeling off the skin.
  8. Gently peel off the skin of the cooked sweet potatoes. The cooked skin should come off easily.
  9. Cut them into uniform slices either diagonally or round.

(Alternative method for roasting the Sweet Potatoes on tawa is to boil them. Choose any method to cook them as per your convenience).

  1. In a mixing bowl, add Olive Oil.
  2. Mix it together with a blend of Spices, including Black Salt, Black Pepper Powder, Salt, Chaat Masala, and Red Chilli Powder for that extra kick.
  3. Add cooked Sweet Potatoes and some Coriander Leaves in this marination mixture.
  4. Marinate the Sweet Potatoes properly ensuring each slice is coated thoroughly with the marination mixture.
  1. Preheat your grill to medium-high heat.
  2. Grilled the marinated Sweet Potatoes until they develop a golden-brown color and grill marks.
  3. Garnish the grilled Sweet Potatoes with Coriander Leaves and serve with mint chutney or yogurt for a cooling contrast to the spicy flavors.
  4. Squeeze a lemon on Grilled Sweet Potatoes just before serving.
