Kheer Recipe | How TO Make Rice Kheer / Rice Pudding?

Simple and Delicious Rice Kheer Recipe.

Rice Kheer or Rice Pudding is a classic dish and one of the best Indian desserts. This is must for every festive occasion in India. The basic ingredients in this Kheer Recipe are Rice, Milk and Sugar. A lot of people like eating it hot wheres I always prefer eating it when chilled.

Alternative Names for this dessert are Payasam, Payasa, Ksheeram. This Kheer Recipe is without using ghee yet so delicious and simple to make.

INGREDIENTS:

  • 1/3 Cup uncooked white Basmati RICE
  • 4 Cups Whole MIlk
  • 4 tsp Sugar
  • 1/3 tsp Cardamom Powder
  • Pistachio
  • 2 tsp Chopped Almonds
  • 2 tsp Chopped Cashews

INSTRUCTIONS:

  1. Rinse 1/3 cup uncooked rice a couple of times and soak in water for 10 minutes.
  2. Take a heavy bottom pan and put it on a medium-low flame and pour milk.
  3. Let the milk comes to a boil.
  4. Drain all the water from the rice and add the rinsed and drained rice to the hot boiling milk.
  5. Stir often to prevent the milk and rice from sticking to the bottom of the pan.
  6. After 10 minutes, you will notice the milk starting to boil over. At this time, reduce the flame to low heat. No need to cover the pan with lid while rice is cooking.
  7. Keep stirring for a few minutes.
  8. Cook the rice till they are half cooked or 50% done.
  9. Now add 4 tsp of sugar to it and continue to cook rice on medium-low flame.
  10. Add cardamom powder, chopped almonds and cashews to it to boost the flavour and enhancing the taste.
  11. Stir well and often to prevent the milk and rice from sticking to the bottom of the pan.
  12. Once you notice the rice and milk together and quantity of milk is reduced, dish is almost ready.
  13. The consistency will be very slightly runny. you can cook it for few more minutes if you want more thick consistency.
  14. Turn off the stove. Garnish it with some more dry fruits like pistachios, cashews, almonds or you can use dry rose petals also. The subtle fragrance of rose petals makes it absolutely iresistible.
