Cooking Twist
Instead of boiling these Sweet Potatoes, I cooked them on a covered griddle (tawa) to trap the heat and create a tandoori or smoky effect. The covered griddle process imparts a smoky flavor and charred appearance, reminiscent of traditional tandoor-cooked dishes. Cooking the Sweet Potatoes with this technique takes the dish to a whole new level. This technique enhances the overall sensory experience, making each bite a flavorful journey.
For 6 pieces of Patties.
INGREDIENTS:
2 Sweet Potatoes (300 Grams) |
1 cup Breadcrumbs (of 2 Bread Slices), (alternatively Rice Flour can be used) |
Oil (for shallow frying) |
1 Onion (finely chopped) |
1 tsp Ginger (grated) |
1 Green Chilli (chopped) |
½ tsp Chaat Masala |
½ tsp Cumin Powder |
½ tsp Dried Mango Powder (Amchur) (alternatively Lemon Juice can be used) |
Salt to Taste |
½ tsp Red Chilli Powder |
¼ tsp Black Pepper Powder |
¼ tsp Black Salt |
INSTRUCTIONS:
1. Prepare the Sweet Potatoes
- Wash the Sweet Potatoes thoroughly. Allow them to dry.
- For cooking Sweet Potatoes, heat a tawa (griddle) on low heat and carefully place the Sweet Potatoes on it.
- Cover the griddle with a lid properly to trap the heat and create a smoky or tandoori effect. This step allows the Sweet Potatoes to cook in their juices, absorbing the smoky flavors.
- Cook the Sweet Potatoes until they are tender and have a smoky, charred exterior.
- Turn the Sweet Potatoes occasionally for even cooking. Cooking process on tawa typically requires approximately 25 minutes.
- Once cooked, turn off the heat and allow the Sweet Potatoes to sit uncovered on the tawa for 10 minutes.
- After 10 minutes, uncover them and let them cool slightly before peeling off the skin.
- Gently peel off the skin of the cooked sweet potatoes. The cooked skin should come off easily.
- Transfer the peeled Sweet Potatoes to a bowl and mash them.
- Use a potato masher or fork to mash the Sweet Potatoes thoroughly. Aim for a smooth consistency to ensure a cohesive patty mixture.
(Alternative method for roasting the Sweet Potatoes on tawa is to boil them. Choose any method to cook them as per your convenience).
2. Season the Mixture
- Add the finely chopped Onion, grated Ginger, chopped Green Chilli, Chaat Masala, Cumin Powder, Dried Mango Powder
(Amchur) or Lemon Juice, Salt, Red Chilli Powder, and Black Pepper Powder to the mashed Sweet Potatoes. - Mix well to evenly distribute the flavors.
3. Integrate Breadcrumbs
- Gradually add Breadcrumbs to the Sweet Potato mixture, mixing continuously. The Breadcrumbs act as a binder, helping the Patties hold their shape.
- Continue adding Breadcrumbs until the mixture reaches a consistency that allows you to form Patties easily. It is essential not to make the mixture too dry, so adjust the amount of Breadcrumbs accordingly.
4. Shape the Patties
- With clean hands, take a portion of the mixture and shape it into a Patty. The size of Patty is up to your preference, but aim for uniformity to ensure even cooking.
- Repeat the process until all the mixture is used, placing the formed Patties on a plate or tray.
5. Cook the Sweet Potato Patties
- In a non-stick skillet, heat Oil for shallow frying over medium heat.
- Carefully place the Patties in the skillet, ensuring there is enough space between each piece. Cook for 3 to 4 minutes on each side or until golden brown and crispy.
- Once both sides are perfectly cooked, transfer the Sweet Potato Patties to a serving plate.
- Sprinkle some Chaat Masala over them.
- Serve them hot and enjoy the delightful blend of sweet and savory flavors. You can pair them with your favorite Dipping Sauce or serve them in a Bun for a Sweet Potato Burger experience.
