700 Grams Whole Wheat Flour | 4 – 5 Potatoes (Boiled) |
40 Grams Semolina (Suji/Rawa) | 2 tsp Oil |
Salt To Taste (or 1 tsp) | 1 tsp Cumin Seeds |
1 tsp Carom Seeds (Ajwain) | 1 tsp Salt |
1 tsp Oil | 1 tsp Turmeric Powder |
1 tsp Dried or Fresh Fenugreek Leaves | ½ tsp Red Chilli Powder |
Hot Water | ¼ Black Salt |
1 tsp Coriander Powder | |
½ tsp Garam Masala | |
½ tsp Chaat Masala |
STEP-BY-STEP RECIPE GUIDE
1. Prepare the Puri Dough
- In a mixing bowl, sieve All-purpose Flour and Semolina.
- Crush the Carom Seeds by rubbing them for 2 seconds between the palms of both hands and then incorporate them into the flour.
- Further add Salt, 1 tsp Oil and Dried or Fresh Fenugreek Leaves.
- Start kneading the mixture.
- Gradually add Hot Water (as and when needed) while kneading the dough.
- Continue kneading until you achieve a a smooth dough.
- After kneading, add a small amount of Oil (½ tsp) and knead the dough again for just one minute.
- Cover the dough with a damp cloth and let it rest for at least 15 to 20 minutes.
2. Prepare the Potato Filling
- Boil the Potatoes until they are soft and can be easily mashed.
- Peel the boiled Potatoes and mash or grate them in a bowl.
- In a pan, heat Oil and add Cumin Seeds.
- Allow the Cumin Seeds splutter.
- Sprinkle in the Spices – Salt, Turmeric Powder, Red Chilli Powder, Black Salt, Coriander Powder, Garam Masala, and Chaat Masala. Stir to combine.
- Add the mashed boiled Potatoes and combine it well with the spices.
- Cook the mixture for a minute and let the spices well-incorporated and the filling has a beautiful aroma.
- Set the mixture aside.
3. Stuffing and Rolling
- Take a small portion of the Puri dough and roll it into a small ball.
- Flatten the ball with a rolling pin to create a small disc with a cavity.
- Place a spoonful of the prepared potato filling in the center of the disc.
- Carefully seal the edges of the disc, enclosing the potato filling within the dough.
- Gently roll the stuffed ball into a circular shape using the rolling pin, ensuring an even thickness.
4. Frying the Stuffed Puri
- Heat Oil in a pan for deep-frying.
- Once the Oil is hot, carefully slide in the stuffed puri and gently press it down using a spatula. This technique aids in quick puffing.
- Fry until the puri puffs up and turns golden brown on both sides.
- Remove excess oil by placing them on paper towels.
- Delightful stuffed puris are now ready to serve.
