Serves = about 20 nos Puris

For Puri DoughFor Potato Filling
700 Grams Whole Wheat Flour4 – 5 Potatoes (Boiled)
40 Grams Semolina (Suji/Rawa)2 tsp Oil
Salt To Taste (or 1 tsp)1 tsp Cumin Seeds
1 tsp Carom Seeds (Ajwain)1 tsp Salt
1 tsp Oil1 tsp Turmeric Powder
1 tsp Dried or Fresh Fenugreek
Leaves
½ tsp Red Chilli Powder
Hot Water¼ Black Salt
1 tsp Coriander Powder
½ tsp Garam Masala
½ tsp Chaat Masala
  1. In a mixing bowl, sieve All-purpose Flour and Semolina.
  2. Crush the Carom Seeds by rubbing them for 2 seconds between the palms of both hands and then incorporate them into the flour.
  3. Further add Salt, 1 tsp Oil and Dried or Fresh Fenugreek Leaves.
  4. Start kneading the mixture.
  5. Gradually add Hot Water (as and when needed) while kneading the dough.
  6. Continue kneading until you achieve a a smooth dough.
  7. After kneading, add a small amount of Oil (½ tsp) and knead the dough again for just one minute.
  8. Cover the dough with a damp cloth and let it rest for at least 15 to 20 minutes.
  1. Boil the Potatoes until they are soft and can be easily mashed.
  2. Peel the boiled Potatoes and mash or grate them in a bowl.
  3. In a pan, heat Oil and add Cumin Seeds.
  4. Allow the Cumin Seeds splutter.
  5. Sprinkle in the Spices – Salt, Turmeric Powder, Red Chilli Powder, Black Salt, Coriander Powder, Garam Masala, and Chaat Masala. Stir to combine.
  6. Add the mashed boiled Potatoes and combine it well with the spices.
  7. Cook the mixture for a minute and let the spices well-incorporated and the filling has a beautiful aroma.
  8. Set the mixture aside.
  1. Take a small portion of the Puri dough and roll it into a small ball.
  2. Flatten the ball with a rolling pin to create a small disc with a cavity.
  3. Place a spoonful of the prepared potato filling in the center of the disc.
  4. Carefully seal the edges of the disc, enclosing the potato filling within the dough.
  5. Gently roll the stuffed ball into a circular shape using the rolling pin, ensuring an even thickness.
  1. Heat Oil in a pan for deep-frying.
  2. Once the Oil is hot, carefully slide in the stuffed puri and gently press it down using a spatula. This technique aids in quick puffing.
  3. Fry until the puri puffs up and turns golden brown on both sides.
  4. Remove excess oil by placing them on paper towels.
  5. Delightful stuffed puris are now ready to serve.
